This cous cous with datterini recipe makes a quick and healthy supper. If you’ve never heard of datterini tomatoes, they’re pretty similar to plum tomatoes, but they have an extra special sweetness when ripe. You’ll find them all over Italy, but for this recipe you can use Cirio’s canned datterini for simplicity. And cous cous is a great healthy grain option if you’re pressed for time, as it’s cooked in minutes and works well with so many dishes.
Ingredients (serves 4)
200g pre-cooked cous cous
400g Cirio Datterini
100g Cirio Chick Peas
1 bunch of parsley
1 lemon
½ cucumber
4tbsp extra virgin olive oil
Salt and hot pepper
Method
Drain the Cirio Datterini into a bowl and separate them from the juice.
Add to the datterini juice the lemon juice, olive oil, one glass of cold water, salt and pepper.
Pour this marinade over the cous cous and let it sit for half an hour.
Add the datterini that you have kept aside, with the chick peas, parsley and chopped cucumber.
Stir together and serve in bowls as a starter or as a main dish instead of pasta or rice.
