Caffeine kick salad recipe

This caffeine kick salad recipe is the perfect lunch to prevent a 3pm slump, and it’s a pretty unique one too – as it’s not often you hear the words ‘caffeine’ and ‘salad’ in the same recipe. The oranges bring a vitamin C boost and the omega-3-packed walnuts add some good fats into the mix too. It’s a great lunch option for vegetarians, or you could add in some chicken or prawns for an extra protein boost for the non-veggies.

Ingredients

1 white chicory

1 red chicory

1 medium-sized blood orange segmented

1tbsp chopped walnuts

Chopped parsley, to taste

For the dressing:

Excess juice from the blood orange (depending on how much you lose from segmenting)

1tsp honey

½tsp wholegrain mustard

Pinch of black pepper

50ml cold brew coffee made with BRITA filtered water

Method

When cutting the blood orange, make sure to catch all excess juice for the dressing.

Roughly chop all of the chicory and mix with the segments of blood orange, garlic, parsley and walnuts.

Add all ingredients for the dressing to a jar, put the lid on and shake vigorously until well mixed together.

Pour the dressing over the salad and enjoy!
