Espresso-chocolate nutty protein cups

These espresso-chocolate nutty protein cups are the perfect pre-workout fuel 

These espresso-chocolate nutty protein cups are the perfect fusion of almonds, coffee and dark chocolate. A perfect pre-workout bite.

Ingredients

28g Whey Protein Pow mix

2tbsp almond butter

1tbsp of your sweetener of choice (try Sukrin’s granulated erythritol, coconut sugar or granulated stevia)

20ml freshly-brewed espresso, to bind

Method

Melt your chocolate in a bain marie (a glass bowl on top of a pot of boiling water).

As the chocolate melts, make the filling of your cups by mixing the rest of the ingredients together, adding a tiny bit of coffee at a time, until you get a thick mixture. Taste the mixture, but try not to eat it all!

When the chocolate has melted, pour half of it between six truffle paper cups. Then, add a dollop of the filling on top and cover them with the rest of the melted chocolate. If you want to make them bigger, all you need is to use regular-sized muffin cups.

Put them in the fridge for 40 minutes and then just ‘unmold’ and enjoy!
