Classic Italian dish Mussels Taranto style is best served hot with some warm crusty bread for dipping into the sauce.
Ingredients (serves 4)
1kg mussels
2 cloves of garlic
400g Cirio finely-chopped tomatoes
100ml white wine
Extra virgin olive oil
Parsley
Salt and pepper
Method
Wash the mussels and add to the pan with garlic, parsley and wine. Cook until the wine evaporates then cover and cook for a further five minutes. Discard unopened mussels, drain and retain the cooking liquid.
In another pan, fry garlic with the finely-chopped tomatoes and seasoning. Cook on a low heat for 10 minutes and then add the mussels and the strained liquid. Simmer gently for a few minutes and then serve with fresh parsley.
