When you think of fritters, you don’t automatically think of a healthy, nutritious food. And that’s why we love these green fritters, because they are nutritious. With the help of a handy spiralizer, even something that you’d formerly associate with a chippy has become a veg-packed treat that will delight dinner guests, make a brilliant lunch, or even get kids to eat more greens at mealtimes. Ingredients (serves 4)
3 courgettes, ends trimmed and cut in half widthways
4 spring onions, chopped
4tbsp chopped mint
125g self-raising flour
1tsp ground cumin
2 eggs, lightly beaten
125g feta cheese, crumbled
1tbsp olive oil, for frying
Salt and freshly ground black pepper
Tomato salsa, to serve
Spiralizer
Method
Using a spiralizer fitted with a 3mm blade, spiralize the courgettes.
In a large bowl, mix together the spiralized courgettes, spring onions, mint, four and cumin.
Heat a little oil in a large frying pan over a medium heat. Cooking four fritters at a time, add heaped tablespoons of the batter to the pan, flatten slightly, and then cook for three minutes on each side, until golden. Repeat until all of the batter is used up.
Serve the fritters with a spoonful of tomato salsa.
