Sweet potatoes are one of those brilliant foods that taste great and are packed full of health-boosting nutrients. Eating this bright orange root vegetable will give you plenty of vitamin A and C, manganese, copper, potassium and various B vitamins – to name just a few of the benefits. They’re also low GI, so ideal for keeping your blood sugar happy. Try this tasty alternative to chips as a side dish or a snack.
Ingredients (serves 4 as a side dish)
4 large sweet potatoes, cut into wedges
3tbsp olive oil
85g soured cream
2tbsp (heaped) Sacla Fiery Chilli Pesto
75g Sacla Char-Grilled Peppers Antipasti, finely chopped
Flaked sea salt
Method
Preheat the oven to 200°C/400°F/gas 6.
Toss the potatoes with the oil and a good pinch of salt. Arrange them in a single layer in a roasting tray. Bake for 30 minutes, turning halfway, until they are golden at the edges and cooked through.
Meanwhile, mix together the soured cream, pesto and peppers and spoon into a bowl.
Serve the wedges while they are still hot and dunk them liberally in the dip.
