This little dessert looks impressive and it’s packed full of health-boosting ingredients. And perhaps the main one is the health food of the moment, chia seeds.
Chia seeds were prized by the Mayan and Aztec cultures and the word ‘chia’ actually translates as ‘strength’ in the Mayan language, as the little seeds were known for their energy-boosting abilities. They’re packed with healthy fats, fibre and minerals, making them a great immune system booster.
Ingredients (serves 1)
1tbsp Ultimate Oil Blend
480ml raw Almond Milk
1tbsp cacao powder
Vanilla pods (or paste)
2tbsp chia seeds
1tsp cacao nibs
Handful raspberries
1tsp edible rose petals (optional)
1tsp coconut flakes (optional)
1tsp bee pollen (optional)
1tsp manuka honey
ripe banana
Method
Blend together the almond milk, oil, cacao powder and vanilla.
Put the chia seeds in a glass or bowl for serving. Cover with the almond milk and mix well.
Leave to set in fridge for 8-10 hours with the occasional stir, to make sure that there are no congealed lumps of seeds. Once set, sprinkle with cacao nibs, raspberries and edible rose petals.
Serve with a ripe chopped banana, manuka honey, coconut flakes, bee pollen, and a final dusting of cacao powder.
