Matcha madeleine cookies

The traditional French sponge cakes have been given a health-conscious makeover with matcha powder, stevia and coconut oil. To make these little treats, you’ll need a special baking tray with scallop-shaped moulds.

Ingredients

11/2tsp BLOOM Ultra Cleanse Matcha

2 eggs

3⁄4 tsp pure stevia extract

1tsp vanilla extract

1⁄4 cup coconut oil

1/3 cup unsweetened apple sauce

3⁄4 cup almond meal

1/8tsp salt

Optional: yoghurt chips and shredded coconut

Method 

Preheat the oven to 180 ̊C (350 ̊F) and lightly grease a madeleine pan with coconut oil.

Beat eggs and stevia together with electric mixer. Add in vanilla extract, salt, and matcha, and continue beating until well combined.

Add coconut oil and apple sauce.

Slowly beat in almond meal until just combined.

Spoon batter into the madeleine baking tray until level at the surface.

Bake for 11-14 minutes, until risen and lightly browned.

Allow to cool, then dip into melted yoghurt chips and coconut shreds if desired.
