Avocado hollandaise recipe

This luxuriously-creamy twist on traditional hollandaise sauce is just the thing to brighten up your brunch-time. Pour it onto your Eggs Benedict for a heart-friendly boost of healthy fats and enjoy the smooth, dreamy, lemony flavour of this delicious avodaise sauce.

 

Ingredients

4tsp lemon juice

1 very ripe medium Hass avocado, peeled, pitted and quartered

240 ml (1 cup) hot water

½tsp salt

½tsp ground black pepper

4tbsp (60 ml) vegetable oil

 

Method

Place lemon juice, avocado, hot water, salt and ground black pepper into the Vitamix container (or a similar blender) in the order listed and secure lid.

Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High.

Blend for one minute.

Reduce speed to Variable 8 and remove lid plug. Slowly drizzle in the olive oil. Replace lid plug.

Blend for an additional 15 seconds or until desired consistency is reached.
