Thai ginger soup with cashews recipe

If you’re feeling a bit under the weather then it’s worth whizzing up this Thai ginger soup with cashews. A steaming bowl of this delicious soup is just the thing to get you feeling back to normal.

As well as tasting great, ginger has been used for centuries for its health benefits. It’s got a long history of relieving digestive problems such as nausea, loss of appetite and motion sickness thanks to its phenolic compounds.

Serve this spicy dish with some crusty bread and enjoy.

 

Ingredients

(serves 4-6)

500 ml water
1 carrot
1 slice (100g) cabbage
1 stick celery
1 slice red pepper
1 piece courgette
1 spring onion, halved
1 slice lemon, unpeeled
1/2 garlic clove
1 piece fresh ginger root, unpeeled
1 slice chilli
100g cashew nuts
10g fresh coriander
5ml honey
1 vegetable stock cube

 

Method

Place all ingredients into the Vitamix container in the order listed and secure lid.

Select Variable 1.

Turn machine on and slowly increase speed to Variable 10, then to High.

Blend for five minutes or until heavy steam escapes from the vented lid.

Serve immediately.
