Raw fudge brownie recipe

This raw fudge brownie recipe by Ashley Hunt is a chocolate treat that is not only delicious but actually good for you too! Vegan, dairy-free and gluten-free, it is perfect for everyone – even the kids will love it! Cacao is full of antioxidants and nutrients, and will make you feel energised and happy. You no longer need to fear your chocolate cravings as long as you are using a good quality single origin and organic cacao in your recipes. Coconut oil contains healthy fats necessary for a balanced diet. It is great for digestion, boosts immunity and can promote weight loss. Make sure you use organic cold pressed coconut oil for the best benefits.

 

Ingredients

1 cup dried fruit, soaked (I use pitted dates and currants)

½ cup nuts (I use walnuts or almonds)

½ cup desiccated coconut

⅓ cup cacao

¾ cup coconut oil

¼ cup rice milk

1tsp cinnamon

1tsp vanilla extract

 

Method

Place all ingredients in a food processor and blend until combined and at desired consistency.

 

Scoop mixture into a baking tray and place in the freezer for half an hour.

 

Remove from freezer once set and slice into pieces. Store brownies in fridge.

 

Optional: for a sweeter treat, add a natural sweetener such as honey or maple syrup.
