This nut butter dates recipe makes my favourite sweet snacks. Dates have been harvested by humans for many thousands of years and there are tons of varieties. But it was the medjool date that was crowned the ‘fruit of kings’. These delicious, sweet, plump fruits offer a rich source of energy, fibre, vitamins and minerals and can be used as a brilliant natural alternative to both butter and sugar in baking.
Dates contain essential minerals including potassium, selenium, copper, and magnesium. These vitamins and minerals are key for strong muscle development, recovery from illness and repairing muscle tears. They also hold the potential to protect cells against free radical damage and are considered a superfood.
Makes 6.
Ingredients
6 medjool dates
2tbsp nut butter (buy a salt-, sugar- and oil-free variety if possible)
Sprinkling of chia seeds or sunflower seeds
6 almonds
Carefully slice the dates lengthways and push out the stone. Spoon a little nut butter into the date and sprinkle with seeds or pop an almond on top. Done! The easiest superfood sweet treat ever.
