Pink champagne and goji popsicles

Try these pink champagne and goji popsicles for an adult icy treat.

Not all cocktails need to be enjoyed in a glass. These pink champagne and goji popsicles are the perfect way to cool down on a hot summer’s day. Filled with fruit, goji berries and pink champagne, they make the perfect adult icy treat!

Ingredients (makes 8)

1tbs goji berries

150g mixed berries

16 small, fresh mint leaves

400ml pink champagne

20ml goji liqueur

20ml Cointreau

Crushed ice

Extra berries and mint leaves, to garnish

Equipement

8-mould ice-lolly tray and wooden popsicle sticks

Method

Pour a small amount of boiling water over the goji berries and leave to soak for five minutes, then drain.

Fill the popsicle moulds with a mixture of berries, goji berries and mint leaves.

Pour the pink champagne, goji liqueur and Cointreau into a jug and stir gently. Fill each mould with the mixture. Place the lids on and insert a popsicle stick into each. Place in the freezer overnight or until completely frozen.

Pour a little warm water over the moulds to loosen them and serve the popsicles on a tray of crushed ice, sprinkled with mint leaves and berries.
