Cookie dough power balls recipe

If I had to name my very favourite Ben & Jerry’s or Haagen Dazs ice cream flavour, it would without doubt be Cookie Dough, which is why I HAD to come up with this cookie dough power balls recipe. As a child I never really understood the point of baking cookies. The dough tasted so much better raw, before it went in the oven. Why ruin it? These energy balls taste delicious as they are, or dipped in a coconut oil and cacao sauce.

 

IngredientsĀ (makes 15)

150g almond flour

3 heaped tbsp nut butter

1tbsp maple syrup

Handful of super fine trail mix

Pinch of cinnamon

Ā½tsp vanilla paste

Pinch of pink salt

 

For the optional chocolate coating

2tbsp coconut oil

1tbsp cacao powder

1tsp honey

Handful of sesame seeds

 

Method

Blitz all the ingredients aside from the trail mix in your food processor. Once the mixture forms a dough, knead the trail mix in with your hands.

Break a small piece of the dough off and roll into a smooth ball. Repeat 15 times, then place the dough balls on a plate and pop in the fridge until set.

If you’d like to add a chocolate coating, melt the coconut oil and cacao powder over a saucepan of simmering water. Add a teaspoon of honey to add some sweetness.

Allow the chocolate to cool but not completely harden, then roll the chilled dough balls in the chocolate, then sesame seeds.
