After a tough workout we’re partial to a bit of protein and this almond butter and banana pancake recipe is one of the tastiest ways to get it!
Makes around 5-6 little pancakes (1 hungry person/2 people happy to share)
Ingredients:
1 egg
1 mashed banana
1tbsp almond butter – I use crunchy but smooth works just as well as peanut butter
50g MaxiNutrition Promax Lean– banana flavour
½tsp baking powder
2tbsp yoghurt
Instructions:
Mix all the ingredients together into a batter (it will be a little lumpy because of the banana).
Heat a frying pan over a medium heat, and add a little butter or oil.
Spoon dollops of the mixture into the pan, and fry until golden underneath and a little puffed up before flipping.
Take the pancakes out the pan when the other side is golden too (you may have to cook all in a couple of batches depending on how big your pan is).
Serve with some yoghurt and fresh berries on top for the perfect healthy brekkie or brunch.
