Get your healthy eating back on track with this seriously simple and tasty salmon recipe

If you eat fish and salmon isn’t already part of your diet, then it might be time to start introducing the protein-packed fish into your repertoire. As well as being incredibly tasty, it also boasts high levels of omega-3 fatty acids, which are known for their benefits for joint and brain health, as well as its anti-inflammatory effects. Try this tasty salmon recipe after a tough session at the gym to help you refuel and recover.

Tasty salmon recipe
Serves 1

Ingredients

1 salmon fillet
1 cup of kale
1 cup of spinach
Handful of cashew nuts
Cayenne pepper
Black pepper
Ground ginger
Bunch of coriander
Lemon juice

Put the cashew nuts and coriander through a food processor or crush in a pestle and mortar.

Add in the spices and lemon juice and mix together, making sure it’s not too runny.

Place the salmon under a grill with the mix on top.

Steam the kale and spinach.

Create a bed of your steamed veg on a plate with the grilled salmon on top.
