Kale salad with POM pomegranate dressing

Try this delicious kale salad with POM pomegranate dressing created by Charley’s Health:


1 large sweet potato
1 tsp coconut oil
Sea salt and pepper
2 Large handfuls of kale
2 Tbsp tahini
1/8 cup POM Wonderful Juice
2 Tbsp agave nectar
Pomegranate seeds
Flaked almonds

1.  Preheat your oven to 180c and line a tray with baking paper.
2.  Cut the sweet potato into small chunks and massage in the coconut oil. Season with salt and pepper and place in the oven to cook for around 30 minutes.
3.  Meanwhile, rinse and pat dry the kale and transfer this into a large bowl. To make the dressing, combine the tahini, agave and pomegranate juice and season with salt and pepper.
4.  Add a few teaspoons of the dressing onto the kale and massage into the leaves so that everything is evenly coated.
5.  Once the potatoes are cooked, add these into the salad and sprinkle over the pomegranate seeds and flaked almonds. Serve with extra dressing on the side.
