Two-minute healthy ice cream

No need to worry about skipping dessert with this two-minute healthy ice cream recipe.

Did you know that when a frozen banana is blended, it takes on the consistency of ice cream? If you haven’t tried this 2-minute healthy ice cream recipe before then your desserts are about to be transformed.

Ingredients (serves 2)

2 ripe bananas, peeled and sliced

Optional additions

1tsp runny honey

1tbsp cocoa powder

1tbsp peanut butter

Frozen strawberries

Chunks of dark chocolate

Method

Ideally, start the day before you want to serve your ice cream. Place the peeled and sliced bananas in a freezer bag. Transfer to the freezer and freeze for at least three hours, though, for best results, overnight is preferable.

Once frozen, put the bananas in a food processor and process until you have reached an ice-cream consistency, stopping the processor at intervals to scrape down the sides. At first the bananas will crumble, but keep going and you will achieve a creamy consistency similar to soft-whip ice cream. Mix in the additional ingredients of your choice.

If you like your ice cream really soft, it can be served immediately, otherwise transfer to an airtight container and place in the freezer until set firm.
