Super chocolate mousse

Raw chocolate avocado mousse is nothing new but this super chocolate mousse recipe makes eating chia seeds and honey even yummier. Light but airy, the coconut milk makes it rich and creamy.

It’s great for a dinner party or as a delicious summer dessert just for you.

Serve it with fresh berries and you are in antioxidant bliss!

Super chocolate mousse
Serves 2

One small ripe avocado
½ cup of coconut milk
½tbsp of chia seeds soaked in a little water
2tbsp cacao powder
2tbsp honey
½ cup water
Your choice of berries to serve (optional)

Whizz all the ingredients in a blender, adding up to ½ cup of water as needed to give a smooth, light airy consistency.

Divide into 2 small dishes and chill in the fridge for several hours before serving.

Tips:
Don’t use light coconut milk and add a pinch of cinnamon or Himalayan pink salt if you want to enhance the flavours.
