Fudgy maca energy bars

Treat yourself to these fudgy maca energy bars post-workout.

These fudgy maca energy bars are chock full of maca powder, which is high in vitamin B6, calcium and iron. It is also a good source of thiamin and protein.

Ingredients (makes 12 to 16)

110g chia seeds

30g hemp seeds

230ml unsweetened almond milk

80g cacao nibs

75g almond butter

60g coconut oil, melted

4tbs honey (preferably raw)

2tbs maca powder

Pinch of salt

Freeze-dried raspberries, for topping

Method

Line a 20 × 20 cm square baking tin.

Soak the chia and hemp seeds in the almond milk for 30 minutes.

Blend all of the ingredients in a food processor until they form a thick batter. Pour into the tin and press down to 4 to 5cm in height. Sprinkle the raspberries over the top.

Freeze for 30 minutes until firm, then turn out of the tin and cut into 12 to16 bars.

Chill for up to two weeks.
