Christmas Bircher muesli recipe

Start your day in true festive sporty with this Christmas Bircher muesli recipe from Cukooo.

Serves: 4

1/4 cup mincemeat
1/2 low-fat natural yogurt
1/2 cup old fashioned oats
1tbsp linseed
1/2 cup cold water

For the topping

3/4 cup natural yogurt (low fat, Greek or regular according to preference)
1/4tsp vanilla paste
1/4 cup chopped walnuts
1/4 cup pomegranate seeds

Mix first five ingredients and put in individual bowls or one large bowl. Leave to sit for several minutes or overnight. Mix topping ingredients and when set, put a layer of yogurt topping on each and sprinkle with chopped walnuts and pomegranate seeds.
