Apricot, coconut and cashew energy bars

High fibre and flavour packed, these apricot, coconut and cashew energy bars are irresistible.

Dried apricots are high in dietary fibre, which in turn helps digestion – and these apricot, coconut and cashew energy bars are filled to bursting with them.

Ingredients (makes 16)

80 g cashews

150 g Medjool dates, pitted

12 dried apricots

2tbs ground flaxseeds

150g grated fresh coconut

Method

Line a 20 × 20cm baking tin.

Blitz the cashews in a food processor until finely chopped. Set aside. Pulse the dates and apricots in the food processor until well chopped. Add the cashews and pulse again.

Mix the flaxseeds with 65ml water in a small bowl. Tip into the food processor and pulse until a sticky ball is formed.

Spread the sticky ball over the base of the tin. Sprinkle fresh coconut over the top.

Cover with cling film and freeze for two hours, or until hardened. Turn out of the tin and cut into 16 bars. Freeze until ready to serve. Defrost until soft enough to eat.
