Apple bake recipe

Enjoy a healthy take on a classic dish with this apple bake recipe from nutritionist Angelique Panagos to warm you through the winter. This is a recipe with a twist – its free from dairy, refined sugar, egg and gluten! Treat yourself to a little slice of heaven.

Ingredients

5 apples
2tsp gluten-free baking powder
125g raisins (soak in a cup of water)
4tsp ground cinnamon
135g flaked almonds
½tsp sea salt
60g flaked coconut
115ml raisin water
2tsp coconut flour
185g coconut butter
40g milled chia seeds
235ml coconut milk
120g quinoa flour
3tsp vanilla essence
250g coconut sugar
235ml water
15ml xanthum gum
3tbsp coconut sugar mixed with 1tsp cinnamon for sprinkling

Method

Preheat the oven to 180°C. Soak raisins in a cup of lukewarm water.

Peel and core apples and cut into approximately 1cm cubes or slightly bigger.

In a large mixing bowl sift together coconut flour, milled chia, quinoa flour, gluten-free baking powder, ground cinnamon, sea salt, coconut sugar and xantum gum. Mix through very well. To the above mixture add flaked almonds and flaked coconut, mix.

In a heavy-based saucepan, gently heat coconut butter till liquid. Add water, vanilla essence, coconut milk and raisin water.

Add apple pieces and raisins to the dry mix of ingredients.

Make a well in the centre of the mixed dry ingredients and add the liquid mixture, stirring and gradually drawing in all dry ingredients.

Line a deep non-stick baking tray with baking parchment and lightly grease with coconut butter.

Empty the mixture into lined baking tray and spread lightly to cover tray. Sprinkle with coconut sugar and cinnamon.

Place in oven and bake for approximately 15 minutes.

Remove from oven, turn out onto a cooling rack and allow to cool.
