Thai peanut chicken bowl recipe

If you need to conjure up something delicious to eat in a matter of minutes, this Thai peanut chicken bowl recipe won’t let you down. It’s a great dish to impress dinner guests too. You can pretend you’ve been slaving over a hot stove for hours, when really you’ve spent most of the afternoon chilling out.

Ingredients (serves 1)

1 portion Merchant Gourmet Thai grains pouch

1 large handful of baby spinach

1 cooked chicken breast

1 lime

1tbsp of crunchy peanut butter

2tbsp sweet chili sauce

Method

Place the spinach and Thai grains in a medium bowl and cover with cling film, cook for two minutes, take out and stir.

Shred the cooked chicken and place on top, then cover with cling film and cook for another two minutes.

In a smaller bowl mix the sweet chilli, peanut butter, and lime juice together. Cook in the microwave for one minute, stir well and serve alongside the chicken and vegetables.
