Sweet chilli marinated basa fillets with Mediterranean vegetables
High in fat, but low in calories, try out a fillet of basa instead of your usual fish choice with this recipe for gastro sweet chilli marinated basa fillets with Mediterranean vegetables. You’ll fast become a fan.
2 Young’s Sweet Chilli Basa Marinated Fillets
12 cherry tomatoes
1 small courgette
½ red onion
1 red pepper
1 yellow pepper
12 button mushrooms
3 tbsp olive oil
Roughly chop all of the veg into chunky pieces.
Heat the olive oil on a griddle pan, add the veg and fry for six to eight minutes until tender and lightly charred.
Divide the vegetables between two and serve with the Basa marinades placed on top.
