Poached egg on green bagel

Need a filling breakfast or brunch idea? Try this poached egg on green bagel. It’s a great way to get started on eating your five-a-day early in the morning, helping you get loads of lovely, vitamin-packed fruit and vegetables into your diet in a super-easy way. Eggs are also packed with amino acids that your body needs to repair itself – making this a brilliantly nutritious dish.

Ingredients (serves 2)

1 large British Lion eggs

1 wholemeal seeded bagel, halved

½ ripe avocado, stoned and peeled

A squeeze of lemon

Salt and freshly ground black pepper

6 cherry tomatoes, halved

Method

Fill a frying pan with 5cm water and bring to the boil. Meanwhile toast the bagel.

Mash the avocado with salt and pepper to taste and a squeeze of lemon, if liked.

Crack the egg into a saucer, then tip it into the boiling water. Reduce the heat to a gentle simmer and cook or three minutes.

While the egg cooks, divide the avocado between the two halves of bagel, spreading it to the edges. Place on two warm plates.

Use a slotted spoon to lift the egg from the water, allow to drain, then place on top of the bagels and serve.
